Ingredients:

450g self-raising flour
2 level tsp baking powder
50g caster sugar
100g butter (cold, cut into pieces)
2 free-range eggs
Approximately 150ml milk
Optional: a handful of sultanas or raisins

instruction:

Preheat your oven to 200°C (400°F).
Mix the wet ingredients in a large bowl.
Rub the butter into the dry ingredients until the mixture resembles breadcrumbs.
Whisk eggs with most of the milk, reserving a little for later.
Gradually mix the wet ingredients into the dry mixture to form a soft, slightly sticky dough. Add the sultanas if using.
Turn the dough onto a floured surface, gently pat to about 2–2.5cm thick, and cut out using a cutter.
Place the dough on the tray, brush the tops with milk, and bake for 12–15 minutes until golden brown.
Serve warm with clotted cream and strawberry jam.
