Ingredients:
  • 450g self-raising flour
  • 2 level tsp baking powder
  • 50g caster sugar
  • 100g butter (cold, cut into pieces)
  • 2 free-range eggs
  • Approximately 150ml milk
  • Optional: a handful of sultanas or raisins
instruction:
  • Preheat your oven to 200°C (400°F).
  • Mix the wet ingredients in a large bowl.
  • Rub the butter into the dry ingredients until the mixture resembles breadcrumbs.
  • Whisk eggs with most of the milk, reserving a little for later.
  • Gradually mix the wet ingredients into the dry mixture to form a soft, slightly sticky dough. Add the sultanas if using.
  • Turn the dough onto a floured surface, gently pat to about 2–2.5cm thick, and cut out using a cutter.
  • Place the dough on the tray, brush the tops with milk, and bake for 12–15 minutes until golden brown.
  • Serve warm with clotted cream and strawberry jam.
