Spanish Chorizo and Potato Tortilla:

Ingredients: 4 eggs 2 medium potatoes, peeled and thinly sliced 1/2 cup diced chorizo 1/2 cup diced onions Salt and pepper to taste Olive oil Instructions: Heat olive oil in a skillet over medium heat. Add potatoes and onions, cooking until potatoes are tender. In a bowl, whisk eggs and season with salt and pepper. Add diced chorizo to the skillet and cook for a few minutes. Pour the whisked eggs over the potatoes, onions, and chorizo. Cook until the edges set, then flip and cook the other side. Slice and serve warm.
