i have had almost no luck with bread lately.

I finally baked a bread again tonight. It looks okay and will most likely taste good but didn't get the oven spring I wanted. The temperature fluctuations really throw me off. I will buy a special heating doohickey for sourdough. It's not really much bigger than one of those coffee cup warmers but is apparently working quite well. I often put the starter and the dough in the oven with only the light on for some warmth, but lately it liquified the starter too much. Bizarre.
