Parmigiana di Melanzane is one of the most beautiful examples of gastronomic care and love. The preparation of the dish takes hours. The eggplants have to be sliced, salted, rested, squeezed, breaded or floured, and then baked. This patience is a sign of care. (Giulia completed the home office in multitasking mode.) The homemade tomato sauce, fried eggplant slices, fresh basil, mozzarella and parmesan are like wrapping the family in a warm blanket. The dish has southern Italian origins, and immigrants in America slightly modified it, since meat is more available there, but the eggplant version has remained a homely, uplifting comfort food. In Italy, this dish is synonymous with family gatherings, where grandma spends hours in the kitchen to pamper her loved ones.
