To make molasses, concentrated sugarcane juice was clarified by hand to remove impurities by adding lime or other agents to the juice before it was filtered to remove any remaining impurities.  Sugar was then crystalized out of the clarified concentrate which left the molasses syrup for shipment elsewhere as an end product or to make rum locally by adding water and yeast to begin the fermentation process to produce alcohol.
