Preparation / Instructions:
Heat the ghee or oil over medium heat in a thick-bottomed pan, add bay leaves, cloves, cardamoms, cinnamon, and cumin seeds. Let it fry for 2 minutes until the spices release their aroma. Remove them from the pan.
Fry the meat on high heat until golden brown, add the chopped dried chilies, and then add the spices from step 1 again.
Lower the heat, add the chopped onion, garlic, green pepper, and grated ginger. Cook for 3 to 5 minutes until the onions become translucent, then add the tomato and let it cook until the mixture thickens.
Add the ground spices and let them briefly fry.
Add sesame seeds and almonds, and fry briefly again.
Add lemon juice, peeled tomatoes with juice, water, bouillon cube, yogurt, and honey. Let it simmer on low heat for 30 minutes.
Finish the dish with roasted cashews and/or raisins, let it warm through.
Just before serving, add a generous pinch of Garam Masala.
Serve with basmati rice and a vegetable dish or salad.
